Time is of the essence these days. And ever since I quit sugar, I realized that if I’m going to keep up a feel-good paleo diet on the reg. breakfast is mass importante.
If I eat this breakfast, I’ve got a much better shot at saying no to any cookies that come my way. It’s super easy to make and keeps me full for a long time. It’s also quite tasty and you can make it ahead of time for the whole week. Well, except for the avocados, you’ll want to cut them fresh each morning.
7 Minute Paleo Breakfast
2 soft boiled eggs (I add the eggs to the water once it’s boiling and let boil for 7 minutes)
1/2 avocado, cut into chunks
handful of cherry tomatoes, cut in half
splash of red wine vinegar (or any paleo dressing you like)
salt + pepper
Soft boil and peel the eggs. Combine in bowl with tomatoes, avocado, red wine vinegar, salt + pepper. Yup. Thats it.
