I’m waaay behind schedule in getting this one up. My bad. When I was trying to decide what to bring to a Superbowl get-together the other weekend, I went back and fourth between salsa and guacamole. Now that I think about it, I often have this dilemma. Even if both of them are in front of me, I have to constantly alternate dips, so that my intake of each is equally distributed. So weird (and not at all OCD).
The logical solution when I couldn’t decide if I wanted salsa or guacamole? Combine them, of course. And guess what? It was a crowd-pleaser. So figured I’d throw the recipe up here. The best part is that it’s 100 percent idiot-proof, and takes about 10 minutes tops. Although a little bit on the casual side, I think it works for a potluck or dinner party app. You could also just make it for yourself, as it’d be great in a salad, a rice bowl, or over chicken or steak.
Easy Avocado Salsa
One can black beans
One can corn (unless you’ve got fresh on hand – that would be delicious in the summer)
One red pepper
1/2 red onion
One bunch of fresh cilantro
1/2 cup olive oil
1/4 cup apple cider vinegar
One teaspoon cumin
Optional: 1 teaspoon chili powder
Sea salt and pepper to taste
Dice up the avocado, red pepper, onion, and cilantro. Rinse and drain the beans and corn and add to the chopped veggies. Throw in everything else. Squeeze the 1/2 lime, and then I like to keep the peel in there for flavor/freshness. Mix it all thoroughly. DONE!
Serve with tortilla, veggie or pita chips as an app, or get weird and just eat it straight the bowl. I do that sometimes.
