Seems as though Bridget and I are on a bit of summer shrimp kick over here, huh? Probs because those little suckers grill up so nice. The first recipe from the app that I wanted to make was Nom Nom’s Sautéed Shrimp with Cherry Tomatoes. And it didn’t disappoint. It was really quick and easy to make and made for a delightful weeknight dinner over here at Casa Barron.
Sautéed Shrimp with Cherry Tomates
- 1 pound large, cleaned and deveined, frozen shrimp
- 1 small onion
- 1 tablespoon of spice blend of choice
- 2 tablespoons of butter (she uses ghee instead)
- freshly ground black pepper
- 1 cup cherry tomatoes
- 1 lime, quartered
Dump the shrimp into a colander and run cold water over them until they’re thawed. While the shrimp are thawing, peel and thinly slice the onion. Dry off the shrimp, dump them in a large bowl and season with spice blend. In a large cast iron skillet, melt 1 tablespoon of butter (or ghee) over medium heat. Add the sliced onions, salt and pepper and sauté until the onions are soft, translucent and slightly caramelized. Then throw in the cherry tomatoes and gently toss them in the butter until they’re warm. Remove the onions and tomatoes from the pan and set aside. Add the other tablespoon of butter and increase the temp to medium high. In two separate batches, sauté the shrimp for about a minute on each side until pink and opaque. Once both batches of shrimp are done, plate and top with the cherry tomatoes and onions. Give a spritz of lime juice and serve warm. Enjoy!
