Lucky for you I am more than happy to provide it, not only because it is my job, but also because it gives me an excuse to make it (eat it) again and it’s quite possibly one of my favorite things to make.
Tell me, is there anything easier to bring to a summer party than salsa? Anything easier to pour over grilled shrimp (or chicken or steak or fish or vegetables)? Anything easier to stuff into a taco?
At this point you might be wondering if my food choices revolve around making things easy, in which case you would be correct. Can you blame me? We’re living through a heat wave after all. The less effort in the kitchen the better amiright?
Here I give you one of my fave summer recipes. Do with it what you will.
Simple Peach Salsa
- 4 peaches, chopped
- 1 red pepper, chopped
- ½ red onion, chopped
- 1 jalapeno pepper, chopped
- 1 bunch fresh cilantro, chopped
- 2 cloves garlic, minced and chopped
- Juice of 1 lime
- Salt + pepper to taste
- Tablespoon olive oil
- Optional: 1 avocado, cubed
Combine all ingredients in medium bowl and mix thoroughly. Hold adding the avocado until ready to serve. Store in the fridge in an airtight container for up to a week.
