I don’t know about you (if you celebrate Easter, that is) but, Easter was a wild affair for us this year. Blew the doors right off my mom’s house. Foster partied so hard he couldn’t fall asleep that night. Which left me getting out of bed every hour on the hour from 9:30 pm until 8:00 am. (But don’t worry, friends. Joel got a great night’s sleep.)
I texted my best friend the next morning, wondering if he’d ever sleep again. “Every junkie has to crash at some point” she responded, showing wisdom beyond her years. And crash he did, right in the middle of his breakfast.

One of the highlights of our rager were these killer Smoked Salmon & Cucumber Bites. I’m going to go ahead and call them healthy-ish and paleo-esque. The ‘ish’ and ‘esque’ due to the fact that there’s cream cheese involved. But hey, we’ve got to live our lives. And any life without cream cheese in it is not one I want to be involved in. Plus, you’re getting healthy fat from the salmon and healthy … whatever from the cucumber and fresh dill.
Smoked Salmon and Cucumber Bites
2 cucumbers, peeled and cut into 1″ rounds
1/2 lb smoked salmon, cut into bite-sized pieces
1, 8 oz package of cream cheese, softened
3 tbsp fresh dill, chopped
1 tbsp Horseradish
1 tbsp heavy cream, optional
Soften the cream cheese. (I did this in the microwave for 20 seconds.) In a large bowl combine the cream cheese, dill, horseradish and heavy cream until smooth. (I used a spatula.) Peel and slice the cucumbers. Cut salmon into bite-sized chunks. Spread a little dollop of the cream cheese mixture onto each cucumber slice. Then place a piece of salmon on top.
